“Matière A” is more than just a restaurant. With its unique wooden table that seats up to 14 guests, it could be a dinner at a friends house. With mirrors on the wall and lightbulbs of all sizes from the ceiling, the room looks warm and friendly in typical Baroque style. Everything here is homemade. Bread and even the butter are the work of chef Anthony Courteille, student of Guy Martin’s workshop. With a unique menu designed according to the arrivals of the day, one day will be different from the next. A chicken breast and grain dish, roasted monkfish with marjoram, beef chuck or fine white tea jelly apple cube are the kind of flavors that will satisfy even the most demanding customers. This establishment, small in size, is a victim of its reputation; it is strongly recommended to make a reservation ahead of time to be sure to enjoy this exquisite experience.
